Ingredients

Adjust Servings:
3 lbs Carrots preferably organic, washed, peeled and cut into small pieces
2 lbs Sweet Potatoes you can also use yukon potatoes
2 Apples peeled and chopped
3 Celery Stalks chopped
1 Large Onion finely chopped
5 Cloves of Garlic
3 inches Fresh Ginger minced
Salt and Pepper to taste
3 tbsp Olive Oil
9 cups Water
1 cup Pura Vida First Love Gramola to sprinkle on top

Carrot Ginger Soup

In a large pan, heat the olive oil, add the onion, garlic and ginger and let simmer for 5-7 minutes.

Add the carrots, potatoes, and sauteé for 10 minutes.

Add the chopped apples, sprinkle some salt and pepper, add a lid and let it sweat for 10 minutes.

Add the 9 cups of water on high heat, letting it come to boil, then lower to medium and cook for 30 more minutes.

Take the pot off the stove to allow the mixture to come to room temperature. Blend it in the blender (you may need to do this in multiple increments unless you have a large blender).

Remove from blender, pour into bowls, and top with First Love Gramola. Enjoy!
