Carrot Ginger Soup

A sweet and savory soup. In a large pan, heat the olive oil, add the onion, garlic and ginger and let simmer for 5-7 minutes. Add the carrots, potatoes, and sauteƩ for 10 minutes. Add the chopped apples, sprinkle some salt and pepper, add a lid and let it sweat for 10 minutes. Add the 9 cups of water on high heat, letting it come to boil, then lower to medium and cook for 30 more minutes. Take the pot off the stove to allow the mixture to come to room temperature. Blend it in the blender (you may need to do this in multiple increments unless you have a large blender). Remove from blender, pour into bowls, and top with First Love Gramola. Enjoy!

Ingredients

  • 1 1/2 lbs Carrots
  • 1 lbs Sweet Potatoes
  • 1 Apple
  • 1 1/2 Celery Stalks
  • 1/5 Large Onion
  • 1 1/2 inches Fresh Ginger
  • Salt and Pepper
  • 1/5 tbsp Olive Oil
  • 4 1/2 Cups Water
  • 1/2 Cup Pura Vida First Love Gramola
