The Lunar New Year (also known as the Chinese New Year) signals the start of the new year, and is marked by celebrations with family and friends, fireworks, and special meals! What better way to celebrate this holiday in our little way with an Asian-inspired dish by our friend, Cody Lindsay from The Wellness Soldier.
Rice Rolls w/ Cannabis Infused Avocado Dipping Sauce
Rice rolls are super easy to make/wrap, all you need to do is dip them into a bath of warm water and when they are workable they are ready. Simply lay out your rice paper, fill it with your favorite ingredients/sauces, and fold in the two outer sides and then start rolling from the top until it’s all rolled up!
The good thing about rice rolls is their flexibility when it comes to fillings. You can use a combination of vermicelli noodles, veggies (good ones include cucumbers, carrots, spinach, bell peppers, spring greens), brown rice, and a variety of meats such as chicken, turkey or bacon.
And now, for the dressing! This avocado dipping sauce complements whatever fillings you choose for your rice rolls. And the cannabis oil elevates your dipping sauce just so.
Avocado Dipping Sauce;
- 1 Avocado
- ½ Cup Sour Crème (Plain Greek Yogurt, Sheep’s Yogurt)
- 3-5 ml Cannabis Oil (Your dosage of cannabis oil if 3-5 ml is too much.)
- 1 Tbsp Lemon Juice
- 6 Mint Leaves
- Sea Salt
- Fresh Ground Black Pepper
Directions:
- Place all ingredients in a food processor and blend until smooth.
